Mexican coffee originates from the central to the southern regions of the country.  This is why the coffee from Oaxacan Plumas can be considerably different from Coatepec and Veracruz coffees.  The Mexican coffee from the Chiapas region, which is the southern most locations are different from all of the rest of Mexico.  Chiapas borders Guatemala at the region of Huehuetenango, and you will find similarities in theses coffees .  Because of the U.S. close proximity, we obtain many of these fine diversified coffees.

Flavor characteristics of Mexico coffees are usually light-bodied and mild with hints of roasted nuts.

            Best roast types:

Light to medium roast is the best creating a mild to medium                                 body

Dark roast if you like more of a burnt taste ( and yes many do)
